Since October 15 2023, diners across the Philippines have been treated to a culinary journey that showcases the distinct yet approachable cuisine of Chiang Mai.

“When people think of Thailand, they often imagine beaches. Chiang Mai offers a contrasting experience with its mountainous landscapes and unique culinary traditions.”


A COLLABORATIVE CULINARY JOURNEY

This special menu was crafted by Mango Tree’s talented Philippine and global teams after an immersive trip to Chiang Mai. They drew inspiration from local tribes and learned from culinary masters like Kannika Tassanaprasit of Iron Chef Thailand fame and Chef Phanuphon “Black” Bulsuwan. These experiences allowed them to bring an authentic yet refined version of northern Thai cuisine to Filipino diners.


HIGHLIGHTS OF THE MENU

The menu features a variety of signature dishes that reflect Chiang Mai’s culinary heritage:

  1. Miang Kham: A build-your-own appetizer with sesame leaves and fillings like coconut flakes, dried shrimp, and a savory-sweet sauce.
  2. Nam Prik Noom: A roasted green chili dip served with crispy pork cracklings.
  3. Laarb Khua: A zesty salad with stir-fried minced pork, lime juice, and makwan peppers.
  4. Sai Oua: A flavorful northern Thai sausage infused with herbs.
  5. Aeb Pla: Marinated fish grilled in banana leaves for a fragrant, smoky finish.
  6. Kaeng Hang Le: A savory-sweet pork belly curry with bamboo shoots, ideal with steamed rice.
  7. Khao Soi: A creamy yellow curry noodle dish topped with crispy egg noodles and fresh lime.

To conclude the meal, diners can enjoy banana fritters with pandan sauce and Thai-inspired bonbons in flavors like milk tea, passionfruit, and coconut.
